One Hot Summer at Lauro Kitchen
We live by the seasons at Lauro and this is going to be one exciting summer!
It is with great pleasure that I announce the creation of a new restaurant named Vindalho (pronounced vene dah loo). Exotic and tropical flavors of South Asia will be the heart of Vindalho — black pepper, cloves, cinnamon, chiles, ginger, coconut and herbs cooked in traditional ways with the locally-sourced, seasonal ingredients of the Pacific Northwest. Read on for Lauro’s early summer menu, our upcoming vacation and more on Vindalho.
Lamb, eggplant, tomatoes, wild salmon, asparagus and spinach are highlights of our early summer menu and nightly specials. Tangine of Chicken, Eggplant and Tomato Jam with Almond Couscous, Greek Lamb Kebabs with Saffron Rice Pilaf and Tzatziki Sauce, Wild Salmon with Lentil-Cracked Wheat Salad and Almond Tarator, Oven Dried Tomato, Fresh Mozzarella and Basil Pizza, Lemon Farfalle with Smoked Salmon, Asparagus and Cream, House Made Spinach and Ricotta Ravioli with Tomato Fondue. Summer desserts include Cherries Jubilee with House Made Cinnamon Ice Cream and Roman Style Cheesecake with Fresh Local Berries.

Introducing Vindahlo - Spice Route Cuisine
In the 15th century, Portuguese traders relentlessly pursued the valuable spices of South Asia. The exotic flavors and cooking methods that the European explorers found on their journeys became known as Spice Route Cuisine. Our new restaurant Vindalho, derived from the Portuguese words for wine (vinho) and garlic (alhos), will open this fall in the new Local 49 Building at Southeast 21st & Clinton. Vindahlo will use centuries-old recipes from South Asia that utilize vibrant spices such as black pepper, cloves, cinnamon, chiles and coconut. Flavorful and unique rice and lentil dishes will also play an important role. The centerpiece of the kitchen will be a tandoor oven, quickly searing flatbreads and skewers of marinated meat, fish and vegetables in its 800-degree red-hot interior. Dishes will be complemented by traditional raitas, chutneys and naan.
The signature flavors of Spice Route Cuisine will be combined with the unbeatable seasonal ingredients of the Pacific Northwest. We are proud to grow in our community, to employ talented people who can walk to work in their own neighborhoods and to unleash the amazing flavors and traditions of South Asia. Visit www.vindalho.com/wordpress/ to explore Spice Route Cuisine with us.
Closed for a Summer Vacation
Lauro Kitchen will close for one week this summer from June 26th thru July 4th. We will reopen on Tuesday, July 5th at 5 p.m.
Notes from the Bar: Oh My Darling!
Three new cocktails are available to fill your dance card. Darling Clementine (you knew that was coming) combines Absolut Mandrin, Clementine and lime juice with rosemary-infused simple syrup. Blood and Sand is served up in a martini glass with Dewar’s scotch, fresh squeezed orange juice, cherry liqueur, sweet vermouth; topped with an Amarena cherry. Lastly, there’s a classic we love with a Lauro twist, Martini Amour: Bombay Sapphire gin, Parfait Amour and a trio of blueberries. Tell Bartender Gloria Preston what you’re in the mood for — they’re all divine!
Plate & Pitchfork and Growing Gardens Fundraisers
Some of our most fun and meaningful days are spent talking with third graders about being a Chef, cooking at a Willamette Valley Farm to demonstrate for diners the connection between plate and pitchfork or serving as Chef in a most interesting and intimate garden space. Thank you for these opportunities and for supporting the innovative projects that teach children about food and the environment, fight hunger in our communities and work to preserve our rich heritage of productive local farms and wine producers.
Here are two events that Lauro Kitchen is proud to participate in:
Chef David Machado: Plate & Pitchfork
Sunday, August 7th at 5 p.m.
This event is sold out. To be added to the waiting list, email us.

We’ve Made a Change... Crisper Frites!
Lauro Kitchen is committed to using the very best products available; including the products that are the best for you. We recently made a change in our deep fryer from pure canola oil to natural rice oil. Natural rice oil is made from the bran of hulled rice. It is purely vegetable-based, has no trans fat, is neutral in flavor and allows the essential flavors we create to shine through. Although natural rice oil is a more expensive product, our priority is using the best products available to serve you the best food available.
Lauro Kitchen is open Tuesday through Saturday from 5 p.m. to 10 p.m. and Sunday and Monday 5 p.m. to 9 p.m. Complementary parking is available in our private lot on the west side of the building. Seating is on a first come, first served basis. Please try to arrive early to insure a table for you and your party.
Salud,
David Machado
